Ground Turkey Gyros

Ground Turkey Gyros - whole wheat pita pockets hold the Greek flavored ground turkey that you shape into balls or patties. Top with tzatziki (sour cream, cucumber, mint dill) sauce and you have a great dinner for those fast-paced nights or for lunch on the go!

Ingredients:

Ground Turkey - 1 1/2 lbs
Garlic - 4 tsp


Oregano - 2 Tbsp
Marjoram - 2 tsp
Lemon Juice - 2 Tbsp
Olive Oil - 1 Tbsp
Pepper – 1 tsp
Salt – 1 tsp
Whole Wheat Pitas - 6
Sour Cream - 1 cup
Cucumber, peeled, seeded and small diced - 1/2 cucumber
Fresh Mint, chopped - 3 leaves
Fresh Dill, chopped - 1 Tbsp
Lettuce, shredded
Tomatoes, large dice
Green Onions, large slices

Directions:

Preheat oven to 400 degrees.

1. Into medium-sized bowl, mix: ground turkey, garlic, oregano, marjoram, lemon juice, olive oil, pepper and salt.

Make a double batch of the turkey mixture. At this point, you can shape turkey mixture into a log, put into a zip lock bag and freeze. You can slice the partially thawed turkey mixture and serve as an appetizer, shape into balls for a buffet or use in Greek Wedding Soup with chicken broth and chopped spinach.

2. Spray cookie sheet with cooking spray. Portion meat into 24 meatballs or 18 patties and place on cookie sheet.

3. In small bowl, mix: sour cream, diced cucumber, mint and dill. Set aside.

4. Bake turkey meatballs or patties for approximately 10 minutes, turn over and cook another 10 minutes until cooked through.

5. At the table, place pita pockets (you may wish to warm them in foil - 350 degrees for 10 minutes), cooked turkey, bowl of tzatziki sauce, shredded lettuce, chopped tomatoes and sliced green onions. Allow your guests to assemble their own gyros based on their personal preference.
