Garlic Bean Spread with Crostini

Serves: 8-10 - Cooking Method: Bake - Total Time: 30 minutes


White beans, garlic and herbs are blended for a winning vegetarian crostini topping, garnished with roasted red peppers. You slice and bake the french baguette until the discs become crisp crostini.

For a large crowd, or to save time, serve garlic bean spread in a bowl with crostini on a platter for guests to help themselves. Remember to include roasted red pepper slices with a small serving fork.

Ingredients:

Olive Oil - 2 Tbsp


Garlic, minced - 2 tsp
Parsley, fresh, chopped - 1 Tbsp
Sage Leaves, dried and crushed - 1/2 tsp
Thyme, dried - 1/2 tsp
White Beans (canned, rinsed and drained)- 1 1/2 cups
French Bread, baguette - 1 loaf
Roasted Red Peppers, sliced (for garnish) - 4 Tbsp

Directions:

1. Place all ingredients except for baguette and roasted red peppers into food processor and blend until smooth. Let garlic bean spread rest for at least one hour for the flavors to fully develop. 2. Preheat oven to 400.

3. Slice baguette in 3/4inch slices. Place on cookie sheet and bake in hot oven until crisp.

4. Spread chilled garlic bean spread on toasted crostini and top with roasted red peppers. Place several on a serving tray and pass to guests.

This recipe is SOOO good. If I have any leftover after a party, I simply spread the extra on a flour tortilla, sprinkle with defrosted (and drained) frozen chopped spinach, and the leftover roasted red pepper strips. I roll up into a log and freeze. When I need a quick appetizer, I simply cut into 1/4 inch slices and bake for about 12 minutes and presto! No one needs to know that it started from a leftover.
