Zesty Herb Chicken Tenders

Chicken tenders made healthy and delicious. A quick easy dinner recipe that kids will love! Strips of moist chicken are coated in an oregano, thyme, dill herb coating and baked instead of fried. Zesty!

Let the kids shake the strips in the herb coating and spray them with cooking spray before putting in the oven to bake. Don't blame us if they don't want to eat purchased nuggets anymore!


Chicken, boneless - 1 1/2 pounds
Flour – 1/3 cup

Powdered Milk – 3 Tbsp
Salt – 1 1/2 tsp
Paprika – 1 1/2 tsp
Dry Mustard – 1 tsp
Dried Oregano – 1 tsp
Dried Thyme – 1 tsp
Onion Powder – 1/2 tsp
Dill Weed – 1/2 tsp
Garlic Powder – 1/4 tsp
Pepper – 1/4 tsp


Preheat oven to 450. Clean and trim meat of any skin or fat. Cut chicken tenders or boneless breasts into strips of equal thickness and length. (This will allow for all pieces to cook for the same length of time).

1. Place all ingredients except for strips into a gallon-sized zip lock plastic bag, seal and shake to evenly distribute the ingredients. One at a time until all chicken is done, place meat in bag of coating, seal and shake to completely cover.

2. Place herbed strips on foil-lined cookie or baking tray that has been sprayed with non-stick cooking spray. Bake in center of oven for about 20-25 minutes or until cooked through.

Make a double batch and freeze. Cut pieces into desired shape and place in zip-lock bag. In a separate zip lock bag, place herb coating mix and freeze both bags. To cook, defrost chicken in refrigerator. If meat is still slightly frozen: Follow previous instructions but bake for a total of 30-35 minutes or until done.

If you have a few tenders left over, place them in a baking pan sprayed with cooking spray. Cover with your favorite marinara sauce and a slice of fresh mozzerella. Bake at 350 until heated through. Place under broiler for a few minutes until cheese bubbles and browns. - Instant chicken parmesan!
