Because these take a while to prepare and bake, make a double batch and freeze one. If you are going to defrost in a microwave, be sure to freeze in a microwavable baking dish!

Ingredients:

Ground Hamburger or Turkey - 1 lb.
Bell Peppers, can be a variety of colors - 3
Rice, cooked - 1/2 cup
Onion, diced - 3/4 cup


Corn, canned and drained - 1 15oz can
Salsa, chunky - 1 3/4 cup
Eggs - 3 Tbsp
Salt - ½ tsp
Colby Cheese, shredded - 6 Tbsp

Directions:

Preheat oven to 350 degrees.

1. (Cook rice according to package instructions) In medium sized skillet, brown ground meat in 2 Tbsp olive oil and onions. Drain oil.

2. Stand Green Bell Peppers with stem facing up. Slice peppers in half vertically, cutting through stem down towards cutting board. Remove seeds. Lay peppers on their backs with the opening cavity facing up.

To save baking time, place peppers halves (3 at a time) on a microwavable plate and microwave for 4 minutes. Repeat with remaining 3 halves. Be careful, because peppers will be hot!

3. In a medium bowl, mix: browned meat and onions, cooked rice, salsa, eggs and salt. Divide mixture evenly and fill pepper halves.

4. Place peppers in oven and bake until center reaches 160 degrees and pepper is tender to the touch. If you microwaved the peppers, the baking time should be approximately 20 minutes.

5. Top each pepper with 1 Tbsp Colby Cheese and bake for another 5 mintues.
