Rattlesnake Pork Bites

Serves: 8-10 - Cooking Method: Stovetop - Total Time: 25 minutes

Bite-sized pieces of tender center-cut pork loin are bathed in a spicy hot sauce. Quickly cook pork cubes and cover with rattlesnake sauce: ketchup, honey, lemon juice and spices. Entire hors d'ouerve can be made in less than 10 minutes. Serve with toothpicks.

Center Pork Loin, boneless, cut into cubes - 1 1/2 lbs.

Ketchup - 1 1/2 cups
Honey - 2 Tbsp

Lemon Juice - 2 Tbsp
Tabasco - 2 tsp
Thyme – 1 tsp
Rosemary, dried (crush in your hand) – 1/2 tsp
Lemon Pepper Seasoning – 1/2 tsp


1. Trim and cut center cut pork loin into 1 1/2-2 inch cubes.

2. In medium-sized bowl, mix all ingredients except the pork cubes.

3. In large skillet heat 2 Tbsp olive oil over medium-high heat. Cook and stir pork cubes for 4-5 minutes or until pork is just done. Add sauce from bowl, stirring to coat pork cubes. Cover and cook about 1 minute until heated through.

4. Transfer pork cubes and sauce to warm serving dish; serve with toothpicks.
