Ingredients:
Diced Onion – 1 cup
Red Bell Pepper, small diced – 1 cup
Jalapenos, minced – 3 Tbsp
Garlic, minced – 2 Tbsp
Brown Sugar – 2 Tbsp
Ancho Chile Powder – 1 ½ Tbsp
Oregano – 2 tsp
Cumin – 1 ¼ tsp
Crushed Tomatoes – 1 ½ cups
Tomato Paste – 1 Tbsp
Brewed Coffee, strong - 2 cups
Directions:
Preheat oven to 300 degrees.
1. Heat 2 Tbsp olive oil in heavy large pot (that can go into the oven) over medium-high heat. Sprinkle beef or pork with salt and pepper and brown each side of meat (about 4 minutes per side) and transfer to a platter.
2. To pot, add onions, red bell pepper, jalepano and garlic, reduce heat to medium, cover and cook until onion is tender.
3. Add remaining ingredients, bring to a boil, scrapping up brown bits and return beef or pork to pot. Cover and place in preheated oven until meat is very tender about 45-60 minutes. Transfer beef or pork to platter, spoon sauce over and serve.
