Ask your deli person to shave 1 1/2 pounds of deli roast beef (we like the garlic roast beef for more flavor).

Ingredients:

Beef Eye of Round, thinly sliced or shaved - 1 1 /2 lbs.
Green Bell Peppers, thinly sliced - 3/4 cup
Onions, thinly sliced - 3/4 cups
Salt – ½ tsp
Pepper – ½ tsp
French Bread - 1 Loaf
Provolone Cheese, thinly sliced - 12 slices

Directions:

Move racks in oven down, so that top rack is 6-8 inches from broiler and set broiler on low.

Slice french bread on a diagonal about 1/2" thick. Layout evenly on baking stone or cookie sheet and lightly toast under broiler until golden brown (flipping once to toast both sides).

1. Heat 4 Tbsp olive oil in a sautee pan. Place peppers, onions, salt and pepper into hot pan and sautee over medium heat until softened. Add shaved beef and continue to stir until all beef has browned completely.

2. Divide beef mixture evenly to cover all toasted crostini. Top with provolone cheese slices cut into quarters and pop back in oven under broiler until cheese melts and bubbles.

Thank you for sharing this recipe. I was looking for something quick and easy, but would still impress my neighbors. I didn't have any green bell peppers, so I substituted a jar of sliced roasted red peppers and they still came out great. I will definitely make these again! -Melissa
