Penne ala Vodka Chicken Recipe

Ingredients:
Penne Pasta - 1 lb.
Chicken breasts, trimmed and cut into 1" cubes - 1 1/2 pounds
Diced Tomatoes - 3 1/2 cups
Salt - 1/4 tsp
Vodka - 1/4 cup
Crushed Red Pepper Flakes - 1/2 tsp
Bacon - 4 strips
Butter - 4 Tbsp
Garlic, minced - 1 Tbsp
Heavy Cream - 1/2 cup
Parmesan Cheese, grated - 1/2 cup
Directions:
1. Follow cooking instructions on the package of pasta. Cook the entire pound.
2. In large skillet over medium heat, add butter, bacon and garlic to skillet and heat until butter is melted and bacon becomes slightly crispy.
3. Add all remaining ingredients except for the heavy cream and parmesan cheese and cook over medium heat until chicken chunks are cooked through – approximately 20 minutes and sauce has reduced in half.
4. Add heavy cream, bring to a boil, stirring constantly. Reduce heat and simmer for 20 minutes.
5. Drain pasta and add to sauce pan. Stir until completely coated. Pour penne, chicken and sauce into large pasta bowl and mix in parmesan cheese.
