Pasta Parsley Pesto

Serves: 4-6 - Cooking Method: Stovetop - Total Time: 30 minutes


Pasta Parsley Pesto recipe for a quick easy Meatless dinner. Pesto is made from parsley and walnuts which are less expensive than basil and pinenuts during winter. Kids will love.

Ingredients:

Pasta - 1 lb. (we like bow-tie or penne)
Parsley Leaves - 2 cups, tightly packed
Toasted Walnuts - 3/4 cup
Parmesan Cheese - 1/2 cup
Garlic - 2 cloves
Salt - 1/2 tsp
Olive Oil - 1 cup
Lemon Juice - 2 Tbsp
Lemon Zest - 1 lemon

Directions:

Follow the cooking instructions on the package of pasta.

Pesto Directions:

1. Into the bowl of the food processor place the following:Parsley Leaves, Toasted Walnuts, Parmesan Cheese, Garlic Cloves and salt. Place cover on and pulse several times until well combined.

2. In a pourable cup, place: Olive Oil, Lemon Juice and the lemon zest. In a slow steady stream add the oil mixture to parsley mixture, pulsing to combine.

3. When pasta has been cooked to desired degree of doneness, drain and place in a large pasta bowl. Pour pesto over pasta and mix throughly. Serve immediately.
