Garden Manicotti

Serves: 4-6 - Cooking Method: Stovetop and Oven - Total Time: one hour


Garden Manicotti - a vegetarian alternative to the basic cheese manicotti. Sauteed eggplant and onions, baby spinach, red bell peppers and mushrooms get rolled in pasta noodles and covered with a marinara sauce.

Ingredients:

Lasagna Noodles, cooked and cooled - 12
Mozzarella Cheese, shredded - 1 cup

Filling:

Eggplant, diced and sauteed – 2 cups
Onions, diced and sauteed – ½ cup
Spinach, torn – ½ cup
Red Bell Pepper, diced – ½ cup
Mushrooms, diced – ½ cup
Ricotta Cheese – 1 cup
Basil – 1 tsp
Onion Powder – ½ tsp
Oregano – ¼ tsp
Garlic – 2 tsp
Flour – 2 Tbsp

Pasta Sauce:

Tomato Sauce – 2 ½ cups
Crushed Red Pepper – ¼ tsp
Garlic -1 Tbsp
Pepper – ¼ tsp
Oregano – 1 Tbsp
Dried Basil – 1 tsp
