Buttermilk Oven Fried Chicken

Buttermilk Oven Fried Chicken, a quick and easy dinner recipe that is baked instead of fried to be lower in fat. Kids will love the crunchiness. A country favorite made healthier.

Ingredients:

Chicken breast, boneless, skinless - 1 1/2 lbs.
Buttermilk - 1/2 cup
Garlic – 1 tsp
Tabasco Sauce – ¼ tsp
Crushed Corn Flakes Cereal – 1 cup
Flour – ½ cup
Poultry Seasoning – 1 ½ tsp
Black Pepper - 1/2 tsp
Lemon Peel, dried - 1/2 tsp

Directions:

1. Into a ziplock bag, place Chicken Breast, Buttermilk, Garlic and Tabasco. Refrigerate overnight.

2. Preheat oven to 375.

3. In fresh ziplock bag, place remaining ingredients, seal and shake to distribute evenly. Working one piece at a time, remove a chicken breast from the marinade and place in bag containing crushed cereal. Seal and shake to evenly coat. Set breast aside and continue until all chicken is coated.

4. Arrange coated chicken on a wire rack coated with cooking spray on a cooking sheet. Lightly coat chicken evenly on both sides with cooking spray. Bake at 375 for 30-45 minutes or until temperature reaches 165. Chicken can be served hot or cold.
